Bigham’s Smokehouse, a locally owned Lubbock barbecue restaurant serving the community since 1978, was recently featured in a business spotlight from Stag Business Coaching, highlighting the restaurant’s family history, company culture, commitment to quality food and continued focus on serving West Texas.
During the interview, Stag Business Coaching’s Kellen spoke with Bigham’s owner Nick Bigham about the restaurant’s history and the values that continue to guide the business nearly five decades after it was founded.
“My dad, Don Bigham, started it in 1978. I’m second generation, and just happy to continue to serve the Lubbock community,” Bigham said.
Today, Bigham’s Smokehouse operates three locations in Lubbock, continuing the family-owned barbecue tradition established by Don Bigham.
Four Core Values Guide the Bigham’s Smokehouse Team
During the Stag Business Coaching spotlight, Bigham explained that Bigham’s Smokehouse centers its operations around four core values:

Those values are intended to carry through every part of the guest experience, from preparing brisket at the pit to serving customers at the cutting block and dining tables.
“We really try to wrap that up in all of our operations, from the brisket to the pit, as well as serving you from the cutting block to the table,” Bigham said.
The focus reflects the restaurant’s effort to preserve the qualities that have made Bigham’s a familiar Lubbock name while continuing to evolve as a second-generation local business.
Taking Pride in What Goes Into the Food
The spotlight also featured Jayden, a manager at Bigham’s Smokehouse, who discussed the restaurant’s approach to its menu and ongoing efforts to make thoughtful changes to the way food is prepared.
One recent change highlighted in the interview is Bigham’s move away from seed oils for certain fried menu items and toward beef tallow, including for french fries and fried okra.
“We take a lot of pride in what we make,” Jayden said.
He also highlighted several customer favorites, including Bigham’s white cheddar mac and cheese and fresh cornbread, which is made each morning and topped with butter and honey.
The discussion offered a behind-the-scenes look at the attention the Bigham’s team gives not only to its barbecue, but also to sides and other menu items that help complete the restaurant’s approach to Texas comfort food.
A Lubbock Barbecue Tradition Since 1978
For Bigham’s Smokehouse, the Stag Business Coaching feature offered an opportunity to tell a story that extends beyond brisket and barbecue.
