Fat Jack’s Opens On Auraria Campus

Locally-owned eatery opens as college students return to school

After a summer’s worth of preparation, Fat Jack’s Subs has just opened its Auraria Campus location. With the newest spot, the local veteran-owned sandwich shop introduced a new concept, which features a signature Fat Jack's store, along with breakfast options from Rosenberg's Bagels, Little Man Ice Cream by the scoop, and Cinnaholic Gourmet Cinnamon Rolls (100% Vegan). For sub sandwich eaters who need a little pick-me-up or spot of tea, Fat Jack’s on Auraria Campus also serves Novo coffee and a couple of Kombucha flavors from Happy Leaf Kombucha.

            “It’s always exciting when we open a new store,” said Kyle Fabra, who co-owns Fat Jack’s with his wife Brooke. “We have the opportunity to customize each location to the specific area. I think students and faculty on the Auraria Campus will appreciate a locally-based sub shop that is fast and serves fresh ingredients, as well as all of the offerings we have available from other food vendors.”

            The Fabras hope to provide paid and unpaid internships to students of business, marketing or hospitality at the Auraria location. The store will also offer bicycle delivery on campus, and plans to have live music on select days of the week.

             Recently, Fat Jack’s opened a store at 450 Broadway and transferred its LoHi store to its new location at 3326 Tejon. Check out their menu, featuring fresh ingredients and tasty bread (including gluten-free) at www.fatjackssubs.com.
