Ever consider hiring your favorite food truck to roll their mobile kitchen on in?  
 
More and more people are choosing this over hiring a traditional caterer and guests could not be happier. Food trucks are now found rolling into weddings, conferences, retreats, and birthday parties to cater tasty meals to hungry guests.
 
“Just having a food truck on site at your party brings a festivity to the atmosphere,” says Erez Kasirer, owner of Poblanos Mexican Fusion food truck.  “Especially at weddings and events people expect to be formal, a food truck really livens things up and lightens the mood.  People just love it.” Catering has quickly become a common service offered by food trucks.  Hiring a food truck to cater an event is similar to hiring a caterer, but with more diversity in options and at a lower cost.  
 
While hiring even a buffet-style caterer tends to cost at least $25-30 per person, a food truck typically clocks in at only $12-15 per person.  This is because their businesses are designed to be low maintenance and efficient. Since food trucks are mobile in nature, they can come to all different kinds of locations.  Whether it’s a wedding on a beach or a gathering in a park, a food truck can drive over and meet you.  Many food trucks have smaller mobile options like food carts that can cater indoor events.  Flexibility and low-cost, quality food are pillars of the food truck movement.  
 
Getting good food to the people is the basis of this business model, which makes food trucks the perfect catering solution. Food trucks also offer unique flexibility in menu options.  For small to mid-sized events, many food truck owners will offer their entire current street menu to your guests.  That way you don’t have to plan ahead for special diets and picky eaters because the full kitchen will be onsite with their full range of menu.  There is also flexibility in timing.  If a full meal isn’t what your event needs, you can hire a food truck to cater a midnight snack option.
 
Alongside the growing popularity of food trucks in the United States, Mexican cuisine in particular has actually become the most popular international cuisine in the country.  
 
ABC news reports that Mexican food is sold in one out of every ten restaurants across the US, including over 38,000 Mexican restaurants across the country as of 2011.  This is great news for Kasirer and his food truck. But before you jump in and hire a food truck for your event, Kasirer cautions to keep a few practical details in mind. Kasirer suggests taking wait time into consideration.  A good food truck can typically serve 100 people in an hour, so be sure to calculate waiting time and work with the food truck owner to coordinate a dining schedule for your guests.  
 
If your event is too big for one food truck to feed all of your guests in a reasonable amount of time, consider hiring more than one. “You want to have at least one food truck for every 75 guests you invite,” Kasirer advises.  “That way, your guests will be happy with more options and shorter wait time, and I’ll be happy to not be swamped with too many hungry people at once.” Kasirer also recommends thinking about where you are holding your event and at what time of year before hiring a food truck to cater for you.  
 
Some food trucks don’t have indoor catering options while others specialize in it.   “If you’re hiring a food truck for an outdoor event, make sure to take weather and season into account,” Kasirer cautions.  “You don’t want your guests waiting in line in the cold, or in the scorching heat.  Also, make sure you’ve got plenty of good outdoor seating.”
