Fat Jack’s Subs Passes The Test To Open On Denver Auraria Campus

Denver-based subshop to launch collaborative eatery August

Fat Jack’s Subs has just announced that the Denver-based and veteran-owned eatery was selected to open its seventh location on the Auraria Campus in Downtown Denver.

The new concept will feature a signature Fat Jack's store that will include select breakfast offerings from Rosenberg's Bagels, Little Man Ice Cream by the scoop, Cinnaholic Gourmet Cinnamon Rolls (100% Vegan), and a yet-to-be-named provider of organic/fair trade drip coffee.

Fat Jack’s is owned by husband and wife team, Kyle and Brooke Fabra, who embrace creative collaborations with other locally-based food and beverage vendors. “We are extremely excited about Fat Jack’s being on the Auraria Campus. Our edgy, irreverent, and millennial-focused brand should resonate well with the student body. This is a tremendous opportunity for our brand, our partners, and will surely be a hit in the new location,” said Fabra.

Expected to open this coming August, the Auraria Fat Jack’s location will offer bicycle delivery on campus, and plans to have live music on the location’s patio on select days of the week. Additionally, the Auraria location will offer paid and non-paid internship opportunities for those students studying business, marketing or hospitality.

Recently, Fat Jack’s opened its sixth location at 450 Broadway and is in the midst of transferring its LoHi store to its new location at 3326 Tejon.
