What started as an experiment in her home kitchen quickly gained momentum. Zook’s husband, then working in a hospital, would bring in baked samples for his colleagues to try. The candid feedback from seasoned nurses confirmed what Zook already suspected: her recipes were good enough to stand alongside traditional baked goods. “Once people said they wouldn’t even know these were gluten-free, I knew we had something real,” she said.

That validation led to the founding of Sinfully Gluten Free. Initially operating as a restaurant and pizzeria, the business pivoted fully to wholesale following the COVID-19 pandemic. Today, the bakery supplies an array of gluten-free products to retailers and continues to expand its menu. The offerings range from cakes, including the ever-popular carrot cake loved by gluten-free and gluten-consuming customers alike, to pizza crusts, pies, cookies, and frozen take-and-bake pizzas. “If you can think of it, we do it,” said Zook.

Despite the variety, quality remains the uncompromising cornerstone of Zook’s brand. “If I won’t eat it, I won’t sell it,” she explained. “I’m not going to put something on the market just for financial gain. Every product has to stand up to its gluten-containing counterpart, or it doesn’t go out at all.” That ethos extends to potential custom product development with retailers. While Zook welcomes conversations about creating new products, she makes clear that integrity comes first.

With gluten intolerance diagnoses and awareness of dietary sensitivities on the rise, the market for gluten-free foods continues to surge.
